Muniq Pumpkin Chocolate-Chip Protein Muffin Recipe
Total time: ~20 minutes
Ingredients:
- 2 scoops (1 serving) — Muniq Vanilla Crème or Vegan Vanilla
- 1 3/4 cups — old-fashioned oats
- 3/4 cup — canned pureed pumpkin or fresh pumpkin
- 1/2 cup (4oz) — applesauce (unsweetened)
- 1/2 cup — fat-free vanilla Greek yogurt (vanilla is optional)
- 1/3 cup — allulose
- 2 TBSP — chocolate chips
- 1.5 tsp — cinnamon
- 1/4 tsp — salt
- 2 tsp — baking powder
- 1/2 tsp — baking soda
- 1/2 tsp — pumpkin pie spice
Instructions:
- Preheat oven to 350 degree F
- Puree the oats in a food processor
- In a large bowl, mix the pureed oats with the rest of the ingredients
- Divide the batter equally into a 12-count muffin tin
- Bake for 15-20 minutes, or until a toothpick comes out clean when testing the center
